General description
Verbascose, a pentasaccharide that contains four units of galactose and one unit of sucrose[1], occurs mostly in leguminous plants.[2] In plants it is synthesized by an enzyme named, multifunctional stachyose synthase using raffinose as well as stachyose as a galactosyl acceptor.[1][2]
