General description
delta-Decalactone is a six-membered, 10-carbon cyclic monoester, which generally exists in two isomeric forms, R- and S. It is an aroma component with a sweet and milky odor.[1][3] delta-Decalactone is also employed in dairy and food products for its characteristic fruity flavor.(5)
