Celiac disease is an autoimmune disorder that damages the small intestine, causing villous atrophy and impairing the absorption of essential nutrients such as proteins, lipids, carbohydrates, minerals, and vitamins. The disease is triggered by an inappropriate immune response to gluten—a mixture of proteins found in cereals such as wheat, barley, rye, and, to a lesser extent, oats.
