The test provides a qualitative result, indicating the presence or absence of gluten in the analyzed sample; it does not quantify gluten concentration in ppm.
Positive results can be obtained from a 16 cm² (2.46 in²) surface area or a 40 cm (15.6 in) linear surface, with a minimum detection level of 10 ng/cm² of gluten on the tested surface.
Specificity:
The assay specifically detects the immunotoxic 33-mer peptide of wheat prolamins (gliadin), rye (secalin), barley (hordein), and oat avenins (Ref. 2), which are known to be harmful to individuals with celiac disease. Furthermore, the assay shows no cross-reactivity with samples containing rice, corn, soybean, buckwheat, sesame, millet, teff, quinoa, or amaranth.
