General description
Potassium sorbate is a food additive, used for the prevention of food spoilage originating from bacteria, molds or yeasts.[1][2] It exists in a variety of products such as pharmaceuticals, cosmetics and employed for preserving processed foods including fruit juices, soda, soy sauce, ketchup, etc.[1]
Potassium sorbate is a preservative[3], commonly used in a variety of food and beverages.[4] It is a food antimicrobial agent[5], which can act effectively along a wide pH range to inhibit the growth of yeast, molds and some bacteria.[4]
Application
Potassium sorbate may be used as an analytical reference standard for the quantification of the analyte in food, beverages[1] and soft drinks[2] using chromatography techniques.
