General description
Neotame is a white colored, dipeptide methyl ester[4], which is found to be a highly potent and non-nutritive sweetener or flavour enhancer and hence finds applications in variety of foods.[5][6] It is manufactured from aspartame and 3,3-dimethylbutyraldehyde in a one-step chemical synthesis process.[4]
Neotame is chemically related to aspartame, an artificial sweetener, used in the production of sugar-free low-calorie foodstuffs.[2] It is approved as a food additive depending upon the food or beverage application.[7]
